Appearance: Light straw, pale yellow colour
Aroma: An elegant nose, definitely dominated by crisp apple, possibly some undertones of a citrus.
Palate: Palate offers a bit more, but similar flavours with a light but lingering creaminess. A good balance of fruit and bubbles here, held together nicely due to the chardonnay grapes.
Review: I’ll be honest, I’ve been waiting for this wine since the sale of one of my old favourite wineries, Watershed. Vasse Felix is turning the old winery into WA’s first sparkling house and I couldn’t be more excited! So what does this mean for the wine? Delicious is the answer. Using the old watershed chardonnay grapes (their best wine) has proven wonders for this elegant bubbles. The pricing is fantastic, sits below your entry champagnes and honestly is a better wine! I would have liked a little bit more creaminess, but that’s a personal preference. Overall, if you were thinking of spending $50-$60 on champagne, give this a try, I think you will be coming back for more!
